Uh... Disc Wars, by Beth Espainer. It's a Star Wars parody done with Discworld characters, but from what I can remember, it's not terribly Discworld. There's a couple of sequels, too. I'd also reccomend the Detective and the Diplomat, another one of her stories. It's a Discworld/Sherlock Holmes crossoeer, adn I think she actually made it work. In the Ed Edd n Eddy fandom, please read Zephyr Samba's stuff. She also wrote under High Planes Drifter. In a fandom full of space fics, Final Fantasy crossevers, and Edd being a werewolf, a vampire, an angel, a demon and an alien, and that's just off the top of my head, one writer stands alone against the forces of "How exactly does "The Adventures of Three Mismatched Friends on Their Eternal Quest for Jawbreakers" translate into "These Three Boys are the Universe's Only Hope," outside Ed's fevered brain?" Well, she may have written the one where Edd is an alien. But it was done well, and that's what counts.

I don't read fanfiction much, but there were a few Chip n' Dale Rescue Rangers fanfics I liked. Can't recall names off the top of my head though. There were also some excellent He-Man parodies I remember as being awesome. You have to be familiar with the show to get it though.

Another one to add here:
I once read a Scooby Doo/X-Files crossover that was pretty good. It was basically about Scooby (and only Scooby--none of the others appeared) getting brought in to help Mulder and Scully solve cases. Mulder proceeds to act like Shaggy and the fic switches to Scooby Mode despite being more based in the X-Files universe.
